I never would have imagined this considering I originate from the bountiful vegan land of Portland, Oregon. This beastly beauty was made by V-Grits in Louisville, Kentucky.

I grew up there and then moved west, and then spent several years living in Seattle and traveling to Oregon (I’ve got family there). Louisville has morphed into Portland Lite with a lot of food, craft beer, events, and distilleries that remind me so much of Portland.

I visited Louisville for the first time last spring. I was so excited to try this place. They ended up being closed every time I had an opportunity to get over there 😭😭 super disappointing.
