    one time someone came in and asked how many BOH staff were working and he pulled out $600 and had me disperse $100 to each of them. (the kitchen was open so he saw this go down) super nice guy.

    Good on that person. People that have never worked in a commercial kitchen have no idea how stressful it can be.

    All tips are shared our where I work, between boh and foh, auto gratuity goes to everyone, cash tips go to waiter directly.(uk)

    I love the “buy the cooks a 6-pack” on menus, but curious how much of it ACTUALLY goes to BOH?

    I’ve worked on both sides and BOH does twice the amount of work usually.

    When the service sucks but the food is great I go out of my to make sure the cooks get the money.
