In this first video of my new series, ‘Experimenting with Steak’, we are using fresh herbs like rosemary and thyme bundles to infuse our steak with smoky, aromatic flavors directly on the grill. The smoldering herbs under the steak will create deep and rich flavors with the aromatic smoke. Let’s see if it’ll work! Enjoy!!😋
*Ingredients*
*For the Steak:*
2 ribeye steaks (or your preferred cut)
2 tbs avocado oil
2 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
*For the Herb Fire:*
1 large bundle of fresh rosemary
1 large bundle of fresh thyme
Tie them together with butchers twine.
Optional: sage or oregano for added complexity
Optional Basting Sauce:
2 tbs butter, melted
1 garlic clove, minced
1 small sprig rosemary and thyme, tied to tongs for basting
Instructions
1. Prepare the Steaks
Remove the steaks from the fridge 30 minutes before grilling to let them come to room temperature.
Pat the steaks dry with paper towels and rub with avocado oil.
Season generously with salt, pepper, and garlic powder on both sides.
2. Prepare the Herb Fire
Soak the rosemary and thyme bundles in water for 10-15 minutes to prevent them from burning too quickly.
Preheat your grill to high heat (450–500°F). I used Jealous Devil MAX XL Charcoal Briquettes for additional searing heat.
3. Build the Herb Fire
Once the grill is hot, lay the soaked herb bundles directly onto the hot grates.
Wait until the herbs start to smolder and release aromatic smoke.
4. Grill the Steaks
Place the regular steak over the grill, and the other experiment steak directly over the smoldering herbs.
Grill for 2-4 minutes per side, depending on the thickness of the steak and your preferred doneness. Remove steak 5 degrees before desired temperature. Steak doneness, 130-135F for med. rare, 140-145F for med. and 150-155F for med. well.
5. Baste for Extra Flavor
Mix melted butter and minced garlic in a small bowl.
Using a fresh herb bundle tied to tongs, dip it into the basting sauce and brush over the experiment steak while it grills.
6. Rest and Serve
Remove the steaks from the grill and let them rest for 5-7 minutes to allow the juices to redistribute.
Garnish with fresh rosemary or thyme sprigs.
