Made a double batch of this spam fried rice recipe for some lunches this week. Used fresh carrots as I don't care for the taste/texture of frozen ones. I also did a mixture of regular and low sodium soy sauce to help with the sodium content. Tasty!

Oh! And I used day old long grain rice since I didn’t have jasmine rice. 😆 Texture/taste still great!

I first had spam fried rice in Hawaii a couple years ago. Now when I meal prep. I usually make extra rice just so I can make this for dinner during the week.
Looks tasty! I wonder if this could be adapted for a freeze ahead recipe. I’d love to do a months worth and pull them out as needed
How does it reheat? Does the rice dry out? Do you add water when reheating?
I’m not hating, just asking for info.
