I live in the Pacific Northwest West in a very rural remote forest area. It’s a mix of rednecks and hippies , because during the 70s there were hippies who moved here to homestead. Even though there is only 100,000 residents for 3,500 square miles of county (its primary forest and water), its health food and vegan paradise. we have multiple co ops and our local grocery store is called Eureka Natural Foods. This is a sandwich I get at a deli, created by myself. In the morning at the hot bar they have vegan chorizo breakfast burritos and more. This roll is also heavenly from a local organic bakery, local spinach, and there is an organic tofu shop that makes their own tofu and sources their own soy, and their products are in all grocery stores and restaurants , they have all types of tofu from
bbq to thai to smoked to spanish or patties etc. They’ve been open since the 70s. Also it’s paradise for local produce and you can find it in all stores.

I love it here 😭 Ivebeen eating this sandwich hot in the morning. Grateful . This sandwich is bomb and the bread omg
