I think I finally have an enjoyable sourdough bread I feel comfortable sharing here.

Recipe:
300g sourdough starter
– 30g starter / 150g flour / 150g water – 12h
570g water (72% hydration in total)
850g flour
20g salt

Mix
Let rest 30 min
Small stretch and form into a ball
Let rest 30 min
Stretch into a sheet, fold back onto itself, form a ball
Let rest 30 min
Another stretch and fold
Put into banneton onto baking sheet, wrap in plastic foil
Let rest 1 hr
Fridge overnight
Take out, flip over on baking paper, score and bake in dutch oven on 470 for 30min
Take out of dutch oven, continue to bake for 15min on 430.

    Color looks good. I am relatively new also, and I’ve noticed that letting my oven preheat for an hour really makes a difference in the exterior coming out right.
