The missus did an online shop and we ended up with many peppers…
How can I preserve them in a simple manner aside from freezing them?

Ferment them in 3% salt water, pickle them in half-strength vinegar, dehydrate [and potentially powder] them.

Either ferment them or do a quick pickle on them.
Quick pickle Brine:
1:1 water and any type of vinegar you like and salt and sugar and spices to taste.
Heat it up to near boiling and pour it hot on the peppers in a glass jar, after it cools down you’ve got pickled peppers, it will keep in the Fridge for a long time.

Honestly freezing is amazing. They slice nicely and don’t get oils on your hands if you work fast.
But I’ll definitely be taking some of the alternative advice you’re getting. Do any of these work with already frozen peppers? Or is it best to start with fresh?

You can dry them

The old-school and low tech way to preserve them would be to string them.

I’d make a chimichurri out of extra with onion, garlic, salt and oil – then put that stuff on everything.
There is a Thai Chili Sauce too that is this but with fish sauce and herbs thats really good also.

Dehydrate them in oven, 150 for 8-10 hours. Grind them up and you have hot pepper flakes for the year.

Are they hot or are they medium?!

Dry them in the oven if you don’t have a dehydrator then blend them and you have your own pepper flakes to use whenever you like
