The “quaility” of the “skelaton” and “yeild” are more important than spelling on the form. That’s great looking meat!

What is the marbling number based on? Is it just somebody eyeballing it? Or is there more that goes into the process?

How long is the feeding time for this? Looks good. Close to having a full pure bred herd with a few black pure bred akaushi’s.

It is a beautiful steak. SOMETIMES the meat market in my town will get a few steaks like this in. And typically are the same price as always. Just a great cow. And I snatch those up.
