After a lot of trial and error, I've got a great breakfast sandwich prep down.

I start with a copycat recipe of Starbuck egg bites (link below). The recipe says put chopped bacon in the egg bites, but I prefer some vegetables. I usually prefer bell pepper, but I only had spinach when I made them today.

After the egg bites are cooked and cooled, I assemble the sandwiches.

Small size croissants from the grocery store, and a half slice of bacon on each croissant.

I cut 1 egg bite in half, horizontally so there are 2 discs.

Each croissant/bacon/eggbite sandwich gets wrapped individually in aluminum foil and put in the freezer.

I reheat them in a toaster oven.

They can be heated from frozen, but its better if you thaw them in the fridge overnight.
Thawed, they take about 20 minutes to heat. (I heat them while I'm getting ready for work. I time it so I can grab it from the oven as Im walking out the door.)
I use the toaster oven because I don't have a microwave, but when I did, they heated up nicely using that, too.

Each sandwich costs about $2.50 usd.

    That’s fantastic! Can I ask how the egg tastes?
    When I was pregnant I meal prepped a bunch of egg and bacon muffins and put them in the freezer. When I thawed them out and reheated them, the egg was absolutely disgusting.
    I’m too scared to freeze egg now
