Breakfast: one huge Japanese purple sweet potato, eggs, Greek yogurt, and kale. (I always cook my eggs slightly less than what I like so when I reheat it, it isn’t too dry.)
Lunch: lean ground beef with taco seasoning, black and kidney beans. White rice cooked in bone broth (not sure if I did it wrong but it didn’t turn out that great. Not worth the added protein imo)
Snack: vanilla Greek yogurt with raspberries and almonds. Persimmons on the side just not in pictures.
As a nurse, who can work crazy hours, I used to make so many excuses to not eat right. Meal prep keeps me on track and I don’t waste half my paycheck on DoorDash. I haven’t totaled anything up but I’m 💯 certain I’m saving a lot of money this way. This took me less than 25 minutes. No excuses anymore.
