Home caught and canned albacore tuna melt ever with esquites

    Recipe for the tuna melt

    12 oz canned albacore tuna (i think mine was more like 14)

    1 stalk of celery, diced

    1/2 small / medium yellow onion, diced

    2 spring onions, sliced

    1/2 tablespoon of Dijon mustard or to taste

    1/4 cup kewpie mayo or to taste

    1 tablespoon of capers

    3 green olives stuffed with lemon or whatever
    olives you want diced

    2 teaspoons white wine vinegar

    3 tablespoons fresh dill chopped

    1/2 teaspoon dried oregano

    3 tablespoons fresh tarragon, chopped

    2 tablespoons of full fat Greek yogurt

    Fresh cracked black pepper to taste
    Salt to taste

    Mix together in a medium mixing bowl. Cover and put in the fridge for half an hour minimum to let the flavors come together.

    Spread on cracked sourdough or bread of choice, top with sharp cheddar slices, broil in the oven on LOW until cheese is melted and just started to bubble.

    Top with baby lettuce and fresh tomatoes or whatever toppings you want.

    This was the best tuna salad I’ve ever made. It would be phenomenal on a buttery croissant.

    Also sorry guys I don’t know why it says “ever” in the title i think I was once again trying to say it’s the best tuna salad I’ve ever made but messed up the title but anyway enjoy 🙂

    Esquites recipe:

    1/2 bag of frozen sweet corn

    A few shakes of Trader Joe’s everything but the elote seasoning (i am so sorry if they don’t currently have this- i don’t know)

    2 tablespoons Greek yogurt

    1 tablespoon kewpie mayo

    1/2 teaspoon each smoked paprika and sweet paprika or add to taste

    1/2 teaspoon each of onion powder and garlic powder

    Salt to taste

    1 tablespoon butter

    Cotija cheese as much or as little as you want to top it with

    Heat the corn on medium low heat with the butter add salt to taste. Add paprikas, onion and garlic powder and elote seasoning right before you take it off the heat. Take off the heat and put it into a bowl let it cool a little. Add the mayo and Greek yogurt, mix well and top with cotija cheese to taste.
