  1. Chicken Tuscan Soup
    Ingredients:

1 tbsp olive oil
1 onion peeled and chopped
2 cloves garlic peeled and minced
2 sprigs fresh thyme or ½ tsp dried thyme
    1 stick of celery sliced
2 medium carrots peeled and chopped
2 medium potatoes peeled and diced
1 litre (4 cups) good-quality chicken stoc
    salt to taste
½ tsp black pepper
14 oz cooked/canned cannellini (beans washed and drained). 
2 skinless cooked chicken breasts, shredded or cubbed
4 oz kale, chopped
small bunch fresh parsley chopped
2 tbsp finely grated parmesan

    Shrimp & Feta Cobb Salad
    (Serving size = 1, all amounts approximated)

    Ingredients:
    A 32 oz mason jar
    1-2 teaspoons of a salad dressing of choice
    2 Tablespoons chopped avocado
    8 grape tomatoes cut in half
    1/4 cup red onion, chopped
    1/2 cup chopped cucumber
    A few handfuls of romaine lettuce
    2 Tablespoons of chopped feta
    6-8 cooked shrimp
    1 boiled egg, chopped
    *Optional cooked bacon, chopped

    Directions:
Layer all items in order starting with the dressing, seal with the lid. Great for an on the go lunch!
