1tbsp Olive Oil
1/2c Onion chopped
3 Garlic Cloves minced (about 2tsp)
Small Sweet Peppers and/or Bell peppers, ripe tomatoes, small zucchini *
1/2tsp Mint dried
1 1/2tsp Dill dried
1/2c Parsley fresh
2/4c Strained Tomatoes
1/2c Water
1lb Lean Ground Beef
1/4c Arborio Rice or other short grain rice
1tsp Salt
1/2tsp Pepper
Boiling water

Heat a large skillet on medium-low and add the oil
Add the onion and garlic
Reduce the heat to low and saute until the onions soften
Wash and the peppers and remove the seeds keep the top of the peppers aside– wash and hollow out the other vegetables if using keeping the tops if possible
When the onion and garlic are softened and beginning to brown add the mint, dill and parsley
Saute for a minute or two before adding the strained tomato and water
Simmer until the sauce becomes thick
Remove from the heat and allow to cool
In a mixing bowl add the tomato mixture to the ground beef
Add the rice and mix everything together with a wooden spoon
Add the salt and pepper and continue mixing
To check the seasoning fry or microwave a small amount of the mixture
Use an oven proof dish that will hold the peppers upright securely
Using a small spoon stuff the meat mixture into the peppers pushing it down so it reaches the bottom
And arrange them in the baking dish
Place the tops of the peppers on the matching pepper – or on ones that are close to the same size
Pour boiling water in the baking dish so that it comes up about 1 inch on the peppers
Bake at 375F for about 60minutes or until the vegetables are tender

Serve as an appetizer or as a main with Greek potatoes and salad

*If using just the small peppers I often end up using almost 2 bags of them (around 30 peppers) So feel free to use some other vegetables as well – The tomatoes are especially tasty!

NOTE: I seem to still have in issue with the video freezing – fortunately it doesn’t happen until the end of this one. I have run a scan on my PC, done a repair on my video editing software and whatever else I could think of. I guess it’s time to get a new card reader!
