Haven’t been grilling very long. I’ve got these two ribeye steaks that have been in the fridge two days past the use by date. My nose is a little messed up right now but I don’t think I smell anything foul. There’s two little grey spots on both steaks roughly in the same location. Is it just oxidation?

If it doesn’t smell, this looks fine. It will start going grey all over (not just under a sticker on the packaging) when it is really past its date.
Former butcher here. It’s good. Beef doesn’t go bad as quickly or as often as pork or poultry. If it were a little gray, it’s still ok. It’s when it turns greenish, slimy, or stinky that you should reconsider consuming.
Looks fine just make sure you pat it dry before seasoning!
That things worth like $40 no way you throw it out.

That meat looks perfectly fine. The bright red parts are from a solution anyway that stores use to keep meat looking red.

Former meat cutter; I can only say that it *looks* fine from where I’m sitting, I’ve eaten stuff that was more questionable than that looks with no issues, and I’d just pat it dry, season with salt and your fave seasonings, cook that steak like you had no worries, because you most likely don’t!

If the smell doesn’t make you pull your nose up and there no sticky-oozy slime to it. Eat it. I’ve survived this long eating things on the brink.

Beef is incredibly forgiving! If you can dry age it for months and cut the mold off and still eat that then your definitely good here. I actually let all my beef except ground get to room temperature before cooking. Allows for a more even cook and better sear. As long as its not slimy or stinks ship it!
