Today I am making mushroom risotto which is perfect to serve for your holiday party! It’s creamy, delicious and comforting.
1 tbs of butter + 1 extra tbs
Drizzle of olive oil
2 shallots finely chopped
4 garlic cloves minsed
5 oz. of baby bella
1 tsp of fresh thyme
Salt and pepper
1/2 cups Arborio Rice
1/4 cup of Pinot Grigio
3 cups of low sodium chicken stock (or more if needed – until rice is tender)
1/4 cup or more grated Parmesan cheese or Parmigiano Reggiano
