Had to make the swan merengues as soon as I saw them

    Recipe is just 3 egg whites, 3/4 cup sugar, cooked over double boiler til sugar dissolved then whipped in a stand mixer. I added a little vanilla and a tiny splash of lemon juice for stability. I know THE swan merengues have coconut but I can’t stand coconut.

    Edit: baked at 200F for about 90 minutes (until I could pick them up without any sticking) and then let sit in the off oven for a couple hours.

    STOP THE PRESS! We can pipe into shapes for merengue cookies?! All these years all I’ve ever done was pipe into blobs upward! Why wasn’t I ever told of this!

    They are so pretty!! I don’t have any experience in baking merengue but considering the consistency would you be able to try making them standing upwards? Instead of sort of ‘laying down’ like this?
