I’ll admit this new hobby is addictive, especially when you fail lol. The first two times I’ll admit that i missed an entire step and prob most important…. I didn’t let the dough rise after folds and went straight to the fridge. Embarrassing but this time I did all steps.

375g water, 80g starter, 11g salt, and 500g bread flour. Mixed everything let sit 30min. Every 30 min performed folds (4). Let rise in container until 75% rise (missed my goal of 50%) shaped covered in fridge for 24 hours and then baked @450 for 30 covered, followed by 15 min uncovered @400.

    It looks great…I have failed so many times to get a decent loaf of bread…I’m not sure whether my starter is strong enough even though I have fed it daily 50-50-50 for over 3 weeks…and use a flour with 14g protein per 100g….it just isn’t working for me

    I haven’t baked my starter yet at all so my perception is skewed but this loaf is a dream!
