    Nice! I would dry brine for 24 hours, crock pot for 6 hours, rest for an hour, and then pop in a 500 degree oven just before you wanna eat.

    What state are you in? HEB (a Texas grocery store) has choice ribeye roasts on sale this week for $4.77 a pound. Kroger has them for $5.97.

    Our local grocer has them advertised for $5.97 (marked $12.99) provided you clip the coupon on their app. Limit one but my wife has the app as well so I got two – one for xmas and one for the freezer,

  15. I just bought at 5.7 pound rib roast from Giant for 50. It was like 4.75 a pound. Great deal!

    In all my life, I’ve never seen one packaged ribs up. That will make a spectacular meal. I would dry it out for a couple of days wrapped in a dish rag or paper towels (changed each day). Hopefully the top has a bit of fat to baste the rest as it cooks. It may not have much marbling, but it also doesn’t have any silver skin/sinew. Hell, baste it with the Kirkland grass-feed butter.
