Is this what you picture when you think of Greek food? Probably not! But this protein rich meal called Fakes can be found all over Greece in homes and tavernas alike. Hearty, comforting, and oh so nourishing, you must try it out!

Ingredients:

-2 cups dried green or brown lentils (rinsed and soaked according to package instructions)
-7 large carrots, diced
-1 head of celery, diced
-1 large yellow onion, diced
-1 head of garlic (don’t skimp here!!)
-6 cups of chicken broth (I used homemade bone broth!)
-3 tbsp. tomato paste
-2 tbsp. dried oregano
-juice of 1 lemon
-3 bay leaves.
-salt to taste

To garnish:
-olive oil
-balsamic vinegar
-fresh feta (treat yourself and get the good stuff ☺️)

Directions:

In a large Dutch oven or pot, sauté your onions, carrots, celery and garlic with olive oil over a medium heat until tender and starting to brown (10-15 minutes).

Once your vegetables have soften, add in your lentils, followed by your broth, tomato paste, oregano, salt and bay leaves.

Bring to a boil, then simmer over a medium-low heat for 20-25 minutes until lentils have absorbed most of the broth and are tender.

Serve with a drizzle of olive oil & balsamic vinegar. Add feta cheese directly on top, and break a little piece off with each bite as you eat. SO GOOD!!! 😍🥰

  1. I pretty much make this (my kids called it ugly soup 🤣) but the chunk of feta and the olive oil and balsamic i have never done. Im so stoked…making it tommorrow. Thank you
