  3. My understanding is that a lot of people won’t eat the greens, you seem to be saying opposite? That the whites are for the cool kids who dare to dream?

    I know a lot of strange people that only way the whites and turn up their noses at the greens. I don’t get them.

    This is interesting, I want more of us to weigh in, am I alone in having a community of “only the whites, toss the greens”?

    I disagree strongly… I cut off the roots as close to the end as possible, the outside leaf is stripped entirely and tossed, then I eat the white until it splits off into the fully green hollow parts (raw dipped in my seasoned salt, or Mccormick season salt) and then the greens themselves i save to cook with within a day or 2 or freeze for stock… the roots can even be germinated under the right circumstances… it is all good… the best even…

    The only thing wrong with green onions is when they get too big. Then they get too fibrous and bitter, otherwise you can use every part but they don’t all hold up the same to heat in cooking

    Hardcore disagree. It’s all the good stuff except for the very very bottom, but I like the stuff about an inch or two from the top the very best.

    My last roommate would always cut the white part off and toss it in the trash. I didn’t know she was doing this until one day I went into the kitchen and saw them in the trash. I asked her why she threw away that part, and she said it was the gross part. I still never recovered from that one.

  11. When a recipe calls for green onion, i never know if im supposed to use the green part or the white part. They are not the same in taste or intensity

    These are “dippin’ onions” to me.. I cut them at “the good stuff” , cut the roots off and I dip them in mashed potatoes..
