There is nothing quite like steak, especially when paired with some amazing steak sauces.

Bearnaise sauce:
1/2 cup dry white wine
1/4 cup white wine vinegar
5 sprigs tarragon
1 medium shallot
10 whole peppercorns
Squeeze of lemon (1 or 2 tsp)
4 egg yolks
8 oz unsalted butter
1/2 tsp kosher salt

Bordelaise sauce:
2 medium shallots finely diced
1/3 cup cabernet sauvignon or another full-bodied red wine
1 cup rich beef stock
1 1/2 tsp balsamic vinegar
4 sprigs of thyme stripped
2 tbsp unsalted butter to finish
salt and black pepper to taste.

Horseradish Sauce:
1/3 cup mayo
1/4 cup sour cream
1/4 cup crème fraiche
1/4 cup prepared horseradish
2 tsp lemon juice
2 tsp W sauce
1 tsp white wine vinegar
2 tbsp chopped chives
Salt and pepper to taste

  2. If ive said it once ive said it a thousand times…… Guga you look well with the weight loss. Keep it up mate!

  3. A trick for making clarified butter without burning it. Put butter in the microwave for like one to two mins then skim the top, done. I found the best container for this is the Chinese takeout soup container.

  4. I made NY steaks with the hollandaise sauce the other day. This recipe was ridiculously easy and tasted fantastic with the wine/shallot flavors.

    Only thing is that my sauces never reduce as much as the recipe says in the time alloted.
