looks solid to me. i might trim some of the fat for tallow, but good and consistent size steaks you got there

yes.. i just cut up a smaller one and realized i hadn’t done it in a while.
    you did a great job.

I’m not a butcher but looks better than half the steaks I see at the grocery store.

  4. Seems expensive even on sale but maybe it’s ok

15$ per steak, not bad. Not bad at all, great thickness too, and a rack of ribs to go with it all haha

Looks good but I would have put that thang on the smoker whole and reverse seared it.

you did great! What you going to do with your fat handle trimmings?

  8. I don’t know why this didn’t post originally…but…
I got this for $7.99 a pound at meijer.
It yeilded 13.5 steaks. 13 at 1.25 inches thick and one at 0.75 inches thick.
Also about a pound of fat for tallow and 2-3 pounds of trimmings for stew or ground beef.

  9. I just got a cryo vac pack like that, and it smelled super funky… real gamey almost like lamb. Went away after I washed, dried, and let air

I concur. I’m about to do the same. I am out of tallow. So wish to maximize that as well.

No. Terrible. Pack them in ice and send them to me and I will see what I can do with it.

Those ribs are going to be great. I would smoke over post oak at 275 until the internal temp is 205. Just rub with salt and pepper before smoking.

Amazing. I would go to sleep so happy every night knowing I had all those steaks in my freezer, and that they cost $7.99/lb. Big respects.
