When all Katherine Wants for the holidays is Olive Oil Mint Chocolate Chip Ice Cream.
At the heart of this recipe, the richness of Ontario whole milk! But sorry Santa, not sure there will be any left by the time you get here.
Serves: 2-4

Chill time: 2 hours

Ingredients:
1.5 cups Ontario heavy cream
1 cup Ontario whole milk
3/4 cup sugar
3 egg yolks
1 cup fresh mint
3 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
3/4 cup semi sweet mini chocolate chips
Method:
1. Bring milk, cream up to a soft simmer.
2. In a separate bowl, mix egg yolks and sugar, slowly whisk in the hot dairy.
3. Blend mint with olive oil and bring to a soft simmer. Pass through a coffee filter or paper towel. Whisk into dairy and let chill for 2 hours.
4. Churn in a chilled ice cream bowl for 25 minutes. Add salt and chocolate chips in the last minute.
5. Move to a freezer container with a lid and freeze for a minimum of one hour before serving.
