In order to get the fluffiness that we like so much, we are going to prepare it with Poolish, a preferment that in addition to making it feel like a cloud, it will give it a lot of flavor.

Ingredients:
– (10%) Poolish – Flour: 53 grs
– (10%) Poolish – Water: 53 grs
– (0.1%) Poolish – Fresh Yeast: 0.5 grs
– (90%) Flour: 480 grs
– (75%) Water: 400 grs
– (2%) Salt: 10 grs
– (1%) Olive oil: 5 grs
