23 December 2024:
Smoked some ribs for the first time. Smoked for 6 hours total (3-2-1) and used a snake method with the coals. Went 4×4 with the coals since it’s cold out where I’m at (20’s all afternoon). Half the circumference of the kettle worked out perfectly for 6 hours.

Overall went pretty good. Checked on the heat every 30 min or so and was steady at 225 almost the whole time.

Wish I had added some liquid inside the tinfoil when I wrapped them to soften them up more, but overall flavor came out excellent. Learning lessons and taking notes for next time.

  2. Use butter in the foil when you wrap!! Like half a stick per rack.

    Interesting – I had a 2×2 coal setup and was at 240 for 4 hours consistently then randomly got up to like 270 for last few, it was like 15 degrees out.

    That’s a beautiful looking cook! My only advice is wrapping them in tin foil the last hour and even ramp up the heat during that last hour. Otherwise, you earned an A+ on your first rib cook!
