Found a recipe calling for a pot cooking method but adapted it to the slow cooker. I love this dish and live near many restaurants that serve it, but wanted to try it myself. Flour tortillas not shown

I almost missed my first son’s first sonogram and heartbeat bc the absolute genius I am ordered a chilli Colorado the night before on date night. I was in the room holding my wife’s hand waiting for the technician when I went pale. More pale than I already was waiting for good news and a clean bill of health. I was NOT well. As soon as I relaxed on the toilet my wife text that that technician had arrived but no worries, I was already driving in the express lane in rush hour.

I love chile Colorado. When I visit my very reasonably priced favorite hole-in-the-wall Mexican restaurant, I ask them to make my lunch enchilada with chile Colorado. 🥰

Once all the beef was gone, I used the sauce as a “consomme” for some quesadillas that I made with the leftover tortillas.
