How do you elevate your cooking overnight? Toast and grind your own spices! It only takes a few minutes and will improve the flavor exponentially. Utilizing spices is a fundamental staple of Indian cooking and every household/restaurant has a unique “Garam Masala” recipe. This Garam Masala recipe can be used in marinations, sauces, & seasonings – it will enhance most recipes and we use it for several dishes at our restaurants!

Garam Masala Recipe:

Cumin Seeds – 170 Grams
Coriander Seeds – 500 Grams
Cloves – 50 Grams
Black Cardamom – 85 Grams
Green Cardamom – 65 Grams
Black Pepper – 125 Grams
Cinnamon Sticks – 20 inches total
Mace – 50 Grams
Bay Leaf – 45 Grams
Fennel Seeds- 15 Grams
Nutmeg- 15 grams
Star Anise- 15 grams

Toast each spice for a couple of minutes, cool them down, grind them, and strain them through a tea strainer. Mix the weighed out spice powders together in a mixing bowl and store in an airtight container. The newer/fresher the spice blend, the better.

TIP: Toast 2-3x the amounts listed (for example toast 340-400 grams of cumin instead of 170 grams) so that you have individual roasted spice powders that can be used in other recipes.
