Ingredients
-2 cups washed and soaked red lentils (soaked for 20 mins)
-Olive oil
-1 large onion
-2 medium carrots
-2 medium size potatoes
-4 gloves of garlic
-2 medium sized tomatoes
-2 bayleaves
-Paprika
-Tumeric (½ tsp)
-Black pepper
-Salt
-Butter

– In a pot add olive oil and cook the onions until they caramelize. Add salt to taste
-Add: Carrots, potatoes, garlic and tomatoes
-Add the soaked lentils, one tsp of paprika, and half a tsp each of black pepper, turmeric, bay leaves
-Cover with hot water
-Cook the soup over medium heat for 30 minutes
-Remove the bay leaves and blend the soup to a smooth consistency
-In a separate pan melt the butter with one tsp of paprika for 2 minutes. Pour it over the soup when you serve it.

ENJOY! Perfect with a nice toasted bread/naan or even roti!
