Maintanosalata (Parsley Salad) is a speciality dip, rather than a salad, from the Cyclades group of Greek islands. We first tried it when visiting the beautiful island of Syros and we fell in love with its freshness and explosive flavour that we decided to make it at home for you.
A versatile dish, can be used as a dip, as a meze, as a sauce for your pasta, even as a spread for your sandwiches (we used it like that and our sandwiches reached another level of flavour!!!).
INGREDIENTS
A large bunch of fresh parsley
1 onion, sliced
Half a garlic glove, sliced
150 gr stale bread without crust
150 ml extra virgin olive oil
2 tbsp capers (wash off any salt)
1 tbsp white wine vinegar
Juice of one lemon
Salt and pepper to season
