Who doesn’t love potato recipes? These Easy 30-minute Cheesy Garlic Potatoes are so great as a snack or served as a side dish and is rich with garlic-butter and coated generously with melted cheese. It’s deliciously good! Potato, garlic, butter, and cheese – a perfect combination!
Easy 30-minute Cheesy Garlic Potato Recipe
Ingredients:
1.5 pounds (700 grams) baby or small yellow potatoes, peeled & drained
1 teaspoon salt
4 ounces (115 grams) shredded mozzarella cheese
3 garlic cloves, finely chopped
Few stalks of spring onions, chopped
3 tablespoon unsalted butter
1/4 teaspoon crushed red pepper
1/4 teaspoon sweet paprika
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper

Note: If you cant find baby potatoes, buy larger
potatoes and cut them into quarters. They
will still soak up the butter and get a nice
coating of cheese.

Directions:
1. Wash and carefully peel potatoes using a potato peeler or a paring knife.
2. Place peeled potatoes in a medium pot or saucepan. Fill saucepan with water until potatoes are completely submerged. Add 1 teaspoon of salt, then bring to a boil over medium heat. Let potatoes cook for 15-20 minutes or until tender. Remove potatoes from heat and drain. Set aside.
3. In medium pan/skillet, melt butter over medium heat. Sauté finely chopped garlic for 30 seconds, then season with crushed red pepper, sweet paprika, salt, and freshly cracked black pepper. Stir until ingredients are incorporated.
4. Add drained potatoes and stir until coated with sauce over medium heat for about 1 to 2 minutes.
5. Add chopped spring onion and sprinkle with mozzarella cheese. Cover and cook over low heat for 2 minutes or until cheese has melted.
6. Remove from the heat. Serve and enjoy🥔🧀
