This is my 5th loaf. All of my previous loaves were super dense and gummy. I decreased the hydration a bit for my starter and I think it turned out great!

350 g of water
500 g of bread flour
100 g of starter (WW flour and bread flour)
Set of 5 stretch and folds, BF for 6 hours at room temp at 73 degrees, cold proof in the fridge over night

I’m so happy!
