    What temp did you cook it at and at what temp did you take it out?

    I would have done a couple of more minutes. But would’ve been happy not to. Slather this with horseradish and it would be near perfection. Very well done. 👍 I’m jealous.

    A minute or two under a high broiler after it’s been removed from the over for 20-30min and rested would help crisp the crust significantly and render some additional fat.

    You know what’s funny, I used to serve at outback, and anytime somebody would order prime rib medium or midrare and would then freak out at the red, well we’d just take it out and have a cookup (sent back) I’m not kidding all we do is run au juis under it to make it brown. Take it back out, all was well. The fucking stories I have about working in steakhouses man…
