In need of a last-minute festive starter or side? We’ve got just the recipe with this Spiced Carrot & Chickpea Dip! 🫘✨
Combining seasonal, caramelised carrots and our Organic Chickpeas roasted spices and whole garlic for full, fragrant flavour, this creamy dip pairs perfectly with a rosemary oil drizzle and our crunchy Organic Breadsticks or Flatbreads 🤌🏼
INGREDIENTS
🥕 200g baby carrots
🫘 1 tin @mr_organic Chickpeas
🫒 @mr_organic Extra Virgin Olive Oil
🌶️ 1/2 tsp @bartingredients paprika
✨ 1/2 tsp @bartingredients cumin
✨ 1/2 tsp @bartingredients ground coriander
🧂 Salt & pepper
🧄 1 whole garlic bulb
🥄 1 tbsp tahini
🍋 2 tbsp lemon juice
🌿 2 sprigs fresh rosemary, stems removed
🥖 @mr_organic Breadsticks or Flatbreads, to serve
INSTRUCTIONS
1. Place the carrots on a baking tray. Drain the chickpeas reserving the water, then pat dry a heaped tablespoon of chickpeas and scatter among the carrots.
2. Drizzle over 2 tbsp of olive oil, sprinkle over the paprika, cumin, coriander, salt and pepper and shuffle to coat. Trim the top off the garlic bulb and drizzle over more olive oil.
3. Roast everything in the oven for 30 mins until caramelised.
4. Once cooked, add the carrots to a @magimixuk food processor, squeeze in the roasted garlic, add the remaining chickpeas and liquid, tahini, lemon juice, a drizzle of olive oil and pinch of salt, blend until smooth.
5. For the rosemary oil, grind the rosemary with salt and a good drizzle of olive oil using a pestle and mortar.
6. Spread the Spiced Carrot & Chickpea Dip in a serving dish, scatter on the roasted chickpeas, drizzle over the rosemary oil and dust with paprika.
8. Serve with our Organic Flatbreads or Breadsticks, crusty bread or pitta – enjoy!
