I was in a bit of a time crunch to make a couple more loaves today so I looked up same-day sourdough recipes and found this one: https://grantbakes.com/same-day-sourdough-bread-recipe/

The only things I changed were swapping out a little bit of the bread flour for AP, and I did the stretch and folds very sporadically due to holiday activities. I added cinnamon and brown sugar to the first loaf. dough temp was ~76 and I BF’ed for about 5 hrs, then pre shaped and shaped, then room temp proof for 1.5 hrs and fridge proof for 1 hr.

I’m super happy with how they turned out, probably the best crumb I’ve achieved so far in my sourdough journey and ironically in a same-day recipe! Tastes good too.

I welcome any feedback or critiques though so I can improve more!
