Mussels Marinara is a family favorite, especially for Christmas Eve

Ingredients
2 to 3 lbs Mussels ( washed and debearded )
1 Lg Shallot (1/4 cup )( minced )
4 to 6 Fresh Garlic cloves (grated)
3 Tbsp Fresh parsley (chopped)
3 Tbsp Fresh Basil ( ribboned )
1 28oz can San Marzano Tomatoes ( whole)
1/2 cup white wine (Sauvignon blanc)
3 to 4 Tbsp Good olive oil (Bono)
salt & pepper to taste
Heat pan over Med heat.
add oil ,shallots and garlic and saute until tender ( 3 to 4 min )
add wine and reduce by 1/2.
hand crush tomatoes into pan with all liquid, add salt and pepper and
simmer 10 to 12 minutes.
add mussels and 2 tbsp parsley and basil , cover and steam mussels
until they all open.
plate with crusty bread and sprinkle a pinch of parsley and basil
over the top , serve and enjoy !
