Short rib ragu with Pappardelle, but the meat is not shredded which is my personal preference.

    You can’t just be posting naked pasta like that. Cover it up with some sauce or at least label NSFW. Call it whatever you want, but sauce the pasta for crying out loud.

    Traditional Italian dinners after antipasti have a Primo Piato (1st plate) which is a pasta dish and then a Secundo Piato (2nd plate) which is the main act and consists of some type of protein with appropriate veggies and non pasta starch combo. If the pasta is with seafood then the main course is a meat dish and vice versa. Vegetarian pasta dishes allow the main course to be either meat or fish. You’ve kinda mixed the pasta course with the main course in the same plate. Fine by me though. Looks delicious! Definitely Italian but you should sauce up the pasta

    Served on a soft Polenta rather than the pasta and you’d be in the zone.

    Are the short ribs from pork? If not, you did not.

    If yes you should mix it well with pasta and, even if you don’t want to break the meat, at least make it in bite that you can eat with the pasta.

    What you made is dry pasta that will stick in 1 minute in a mappazzone, with a second plate of short ribs on top… I mean the short ribs are probably ok, but the pasta is not.

    I mean, that is the difference between Italian cooking and pseudo-Italian cooking, if you eat the meat separately like you would if it was on another plate, then it makes no sense putting it onto pasta

  7. Looks good but that’s not a ragù. As an Italian, I’d eat that with bread or polenta. I wouldn’t put it with pappardelle.
