Greetings burgers & movies lovers!

John McLane and Die Hard were on TV and we watched Bruce Willis crawl through the ventilation system at Nakatomi Plaza while munching down on this pork double cheeseburger.

And just like Hans Gruber (Jack Gruber in the german dubbed version we watched) and his colorful/merry band of euro terrorists we also came in prepared. With a new batch of burger buns. Third picture. A few words on them. Not the trashy terrorists but buns. Well, kind of.

Just as that group was colorful (at one point, one of the group, they call him Marco, is shooting and shouting at McLane in bad Italian with a heavy german accent and then swithching to German with a heavy italian accent) so were the ingredients in our burger buns.

Ah, watching american movies dubbed in Europe is ALWAYS a blast! So back to the buns themselves. We had a few OLD leftover burger buns from our last batch last week so we used them as a component in the NEW bun dough mix. Around 10% in weight to the whole flour weight. Soaked in water, crumbled and added to wheat flour (65%), corn flour (25%), powdered milk (10%), honey (5%), sunflower oil (5%), salt (2%) and fresh yeast (0.5%).

Left to proof for 16 hours before baking. Brushed with egg wash, sprinkled with chopped pumpkin seeds. A butter glaze after baking. A special nod to all the people wearing a "LET'S GET BAKED" sweater these days! Amateur home bakers or not!

The burger interior was also as flashy as the offices of Nakatomi Plaza. 1980's kind of flash.

  • two coursely ground pork quarterpounders
  • four slices of gouda cheese
  • three slices of fresh tomato
  • thinly sliced red onions
  • four slices of smoked pancetta (this is not american bacon)
  • a whole chunky pickle sliced lengthwise
  • mayonnaise
  • ketchup
  • salt
  • cracked black pepper
  • butter

And all of this washed down with a cold can of Coca-Cola, just like poor Ellis did in the movie…
