    Boned and tied 3.75 lb choice rib roast. Marbling was way superior to other choice roasts in the case.

    Removed bone rack and tail, salted heavily before vac bag to brine while it was in the bath. Was asked last minute to cook dinner so it only thawed for maybe 36 hours. MEATer said 29° internal at the start.

    Cook was 131° for 7 hours, finished with a compound butter broiler sear. Served with an Au Poivre cause I didn’t have time to prep a more extensive sauce.
