Zeppole – a simple Italian treat. They come in various different versions and today we are going to share with you the simple, basic Calabrese version – nothing fancy, but a quick and easy treat πŸ™‚ Hope you give them a try

Basic Calabrese Zeppole
Ingredients
β€’ 2 cups of double zero flour (00 flour) (260 – 267 grams) (9 – 91/2 oz)
β€’ 2 TSP baking powder
β€’ 1 tsp of salt
β€’ ΒΌ cup white sugar
β€’ 2 eggs
β€’ 1/8 cup (30 grams) (1 oz) melted butter
β€’ Oil for frying
β€’ White powdered sugar (powdered icing sugar) for dusting

Process
β€’ Mix flour, baking powder, salt and sugar in a bowl.
β€’ In a separate bowl, add the eggs and melted butter – mix together
β€’ Add the egg mixture to the flour mixture and mix together
β€’ Work into a dough and knead for 5 – 10 minutes until the dough is soft & smooth
β€’ Wrap the dough with plastic wrap & let stand for a minimum of 30 minutes or longer
β€’ Add oil to a frying pan, enough to semi deep-fry, and bring up to around 350 deg F
β€’ Tear off a piece of dough, approximately 5 cm or 2 inches, and place into hot oil
β€’ Add more pieces, but do not overcrowd the pan
β€’ Fry until golden brown, then turn them over, and fry the other side till golden brown
β€’ Remove and place on a paper towel to absorb some of the excess oil.
β€’ Sprinkle a generous amount of white icing sugar on top
β€’ Enjoy
