Used the leftover duck fat from the previous nights dinner to make duck fat roasted potatoes. Also made a jus, horseradish cream and melted onions as accompanying sauces. Bacon-Brussels for a veggie.

    Bro looks great…. Perhaps next time cook to 120 @ 225° hold for at least 2 hours…. don’t look at it don’t even think about it…let it sleep and it will be perfect med.
