Preparation
- Combine sugar and 3/4 cup water in small saucepan, and simmer until sugar dissolves. Remove from heat, and cool to room temperature.
- Combine cooled syrup, mango and lime juice in blender or food processor, and blend until smooth. Cover, and refrigerate until very cold.
- Stir mixture, and then freeze in ice cream maker according to manufacturer’s directions. Serve at once, softly frozen, or transfer to container and freeze at least 2 hours longer to harden.
