    Much easier to carve when the bones are removed first.

    Don’t push, slice. Long strokes without pushing to hard are better. Let the knife do the work. Tip to heel, heel to tip.

    Next time put a wet paper towel under your board so it does not slip around. Will make slicing a lot easier.
