    I am a Texan and I immediately recognized that as smoked ham. Sure you can sear it but in my childhood I ate many hams as such. Don’t eat much meat these days but I could go for a ham sandwich now…

    I’m guessing most of the “this is raw meat” people aren’t Australian. It’s common place here to get a smoked leg of ham at Christmas. It’s not thin slices because it’s cut off the bone. The whole leg is smoked as is, and the consumer at home either bakes it further, often with the skin on. Or they cut it off and cut it as cold sliced ham. In that case, there’s a layer of white fat under the skin exactly like what OP has here.

    We eat cold ham at Christmas because it’s the middle of summer.

    I literally have a leg of ham in my fridge that looks exactly like this, lightly smoked, not too over processed or anything. It’s absolutely delicious and I look forward to it every Christmas, cut nice thick slabs off. Why are Americans like this…
