    im guessing the thought process is that that small amount of ice cream would melt too much with a shot or two of espresso?

    That’s too much ice, but I guarantee this was done because it was taking too long to get to the tables and all the gelato was melted, so people complained.

    The right move there is to add less espresso or more gelato but hey… Some people are stupid and we’re an inclusive society.

    Mt mom scoffed at me for using crushed ice in my (modified from Morgenthaler’s recipe) grasshoppers at Christmas. Then she tried one and sat all the way down. This obviously isn’t that, but… ice cream and ice can coexist.

    I can only imagine it’s so kitchen can send ice cream to the bar to keep the scoop cold? So the customer gets a super freshly poured espresso and unmelted ice cream (and the ice gets discarded)

    I can do one better. We are buffet, but bring the dessert out to the table. Our new prep cook, who I personally trained and showed how to do the desserts, decided he was going to serve big ass scoops of ice cream sundaes on plates. Sauce and everything. I walked into the room, and I just stood there…. like what do you say to that? I mean, I know what I Wanted to say. He was one of our worst prep cooks. He didn’t last long.

    I had to read the thread to figure that this was supposed to be an “affogato” a term that was currently not in my lexicon. Through research (googled affogato) I agree. This in not an affogato.
