Leftovers Fried Rice:
2 cups long grain rice
2.5 cups water (to cook rice)

1-3 cups leftover Christmas meats (ham/chicken/turkey/prawns
4 eggs
as many vegetable as you like, but I try to include at least:
2 onions, 2 cloves garlic, 1 piece of ginger, carrots, capsicum, cabbage.
sauces: Sweet chilli sauce, soy sauce, sweet soy sauce, hoisin sauce, oyster sauce,

I also add a few dried mushrooms rehydrated and the water they are rehydrated in.
