The “Wedding Pillows” are a dish that my parents tried at Lidia Bastianich now defunct restaurant, ‘Felidia’ in NYC. It shares characteristics with a Croatian dish, Krafi. As the name suggests, typically served for weddings or special occasions – I really wanted to make this for my parents since I’ve been practicing my fresh pasta making abilities. The sheets of pasta are stuffed with rum soaked raisins, ground clove, alpine cheeses, parmigiano reggiano, thyme, orange and lemon zest – served in a butter, black pepper, and thyme sauce.
First time eating Capon, and it thoroughly exceeded mine and my families expectations. Got it fresh from a local poultry farm and it had an incredibly clean/refined flavor.
