    Careful when you cut or it could just collapse.

  2. I like to let it cool out of the crock for an hour before choping into large chunks and crisping up in a hot oven. If time permits, I’ll refrigerate overnight before finishing in the oven. Something about the way the fat congeals makes it taste even better.
