I have two chicken breasts that I butterflied and put in a bag with brown, sugar soy sauce and sesame oil, can I just toss that in the water and let it start, is soy sauce too “strong” to cook in ?

    Yes, you can. May need to weight down the bag.

    I would just make sure the total amount of sodium in the bag isn’t too much. If you know how much soy sauce you used, you could compute the equivalent amount of salt from looking at the label. Around 1-1.5% salt to total mass is fine. Otherwise I wouldn’t cook in it

    Try a plant based, compostable plastic.

    Make sure which ever brand you choose that the bags are BPA free.

    Yes, you can sous vide with it in the bag. I do it frequently in those bags with no problems… my biggest suggestion is just making sure you keep the top above the water line, as if I have a fail, it’s always there… though the only fail I ever had was with corn on the cob and mashed potatoes that required super hot water that I won’t do either again sous vide as they are better other ways
