For those who don’t understand, American Wagyu isn’t the same breed as Japanese. They don’t allow export of breeding pairs. American Wagyu is usually a cross of Angus and the Japanese line. Not sure about Australian? The Koreans have similar restrictions for their stock as well.
Edit: I had to go make sure my memory wasn’t making me talk out my ass and found this dudes summary of the history I recall. Kinda cool that someone got a couple hundred in the 70s before Japan put their foot down. Ok so I’m here reporting back. This somehow exceeded my expectations and crushed my usual buy route to HEB. I had never tried the Walmart route and decided to go just because of this post. My girlfriend and I ate it and it was delicious. Probably the best I’ve had in a long while and I eat steak regularly. Simple cast iron cook. Not much room temperature sit out before and the crust was great. No basting. Simple salt & pepper. Would highly recommend.
