🌷 MEASUREMENTS AND RECIPE LINKS🌷

🌼Loaded Potato Slices
-3 to 4 slices of bacon, cooked and chopped
-1 Large baking Potato, cut into 1/4 inch slices
-spray oil
-salt and pepper
-Cheddar cheese, shredded or sliced (1 1/2 cups or so)
-dried chives or sliced green onions
-sour cream

Bake on 400° for 15 minutes. Flip over, spray with more oil and salt and pepper. Then bake an additional 10ish minutes. Top with cheese and add back into the oven for 2-3 minutes to melt! Top with bacon, chives/green onions, and sour cream! Enjoy!

🌼Orzo Pasta Salad

What I did differently:
-Recipe calls for 1 whole english cucumber, I used half
-Recipe calls for Kalamata olives, I skipped those.
-Recipe calls for 1/2 cup of feta cheese, I didnt have enough so I subbed Parmesan … It was delicious as well!
-Recipes calls for fresh basil, I didnt have that so I added 1 tsp of dried basil
-I also added a little extra sugar

🌼Roasted Potatoes and Broccoli
-1 bag of baby yellow potatoes
-2 tbsp of avocado oil
-1/2 tsp of salt
-1/4 tsp of pepper
-1/4 garlic powder
-1/4 tsp of onion powder
-1/4 tsp of red pepper flakes
-extra spray oil for the pan

-1 smaller head of broccoli, just florets
-1 tbsp of avocado oil
-1/4 tsp of salt
-1/4 tsp of garlic powder
-1/4 tsp of onion powder
-1/8 tsp of pepper
-1/4 tsp of red pepper flakes

-1/4 to 1/2 cup of shredded parmesan cheese
-a squeeze of lemon juice

Bake on 400° for 15 minutes, then add the broccoli and bake an additional 15 minutes. Then add cheese and lemon juice.

🌼Ranch Tortellini Pasta Salad
-18 oz of cheese tortellini, cooked
-5 slices of bacon, cooked and chopped
-4 oz of sharp cheddar, cubed small
-1/2 cut of sour cream
-1/4 cup (maybe slightly more) of mayonnaise
-2 tbsp of ranch seasoning mix
-2 to 3 tbsp of milk or half and half
Salt and pepper only if needed!!
Chill for one hour!
Reserve some of the bacon to add on top when serving!

  2. Hi again. I really enjoyed the video, The loaded potato slices look good. I'm going to try them. I am a single older lady and seeing what you are cooing for the two of you gives me lot of ideas. Give your hairy baby a pat, what's it's name?

  3. The loaded potato slices would be a good side dish. I will try those. That would be a good side for two people. I have roasted potatoes and broccoli for sides and we love them cooked this way. I have not roasted them together like you did. I am going to try that. I have not cooked with orzo or tortellini before so I have to think on those awhile. 😁🌻🌻🌻🌻
